Meet the Chef
Originally from Acapulco, Mexico, Sergio discovered his love for food as a child helping at local restaurants where his mother worked. At 19, he came to the U.S. seeking a better life and began as a dishwasher at Chipotle, eventually becoming a General Manager. With 20 years of experience in the culinary world, he’s since worked at top restaurants like Hillstone and Cherry Creek Grill, taking on roles from Chef to Culinary Director. Sergio’s passion and creativity continue to shine in every dish he makes.

Ecos de Mexico is the vision of Sergio and Claudia, a husband-and-wife duo whose journey in the culinary world is rooted in dedication, hard work, and a love for authentic Mexican cuisine. With decades of experience across every aspect of the restaurant industry, they’ve created a family-run food truck that brings the rich flavors of their hometowns—Acapulco and Cuauhtémoc—to the streets of Colorado. Their mission is simple: to serve food that feels like home and honors the culture that shaped them.
